I am going a little squash crazy right
now. Summer squash are abundant,
with readers reporting that they are
getting a bounty in their CSA boxes.
I cannot help grabbing a few each
week at the grocery.
Sometimes I simply cut squash
into thin slices, saute it with a little
olive oil and minced garlic, sprinkle
that with generous amounts of
Parmesan and pepper - and dig in.
Summer squash are soft with
thin skin that is edible. It's true that
zucchini and yellow squash are
available year-round, but I crave
them more this time of year. Also,
this is the time when other varieties
show up, especially at farmers
markets, such as yellow and zephyr
zucchini varieties. Or, maybe you're
seeing the fun-shaped pattypan
squash around, as well.
The neutral-tasting vegetable
slips easily into a savory take on
clafoutis, frittatas and mufins.
Squash also can be grated and
turned into crispy pan-fried fritters
or grilled and topped with a bright
yogurt sauce and fresh herbs.

Or you can throw together this
squash skillet recipe, which is so
adaptable that you probably can
make it from whatever you have in
your pantry or refrigerator.
For this version, I selected both
zucchini and yellow squash, adding
a little colour to the plate.
If you have a favourite jarred
marinara or batches of homemade
tomato sauce in the freezer, use that.
Or do as I did here and rely on a can
of quality inely chopped tomatoes
and sprinklings of dry herbs to pull
together a quick sauce.
The dish gets a kick of lavour
from spicy Italian sausage and
generous shake of crushed red
pepper lakes.
You can try turkey or chicken
sausages - both come in Italian-
style, so you get that seasoning with
less fat. Or switch to a meat-free
sausage. Boca, Tofurky and Yves
make vegetarian Italian sausage,
for example. These will be irmer,
so you may have to chop them
before adding them to the skillet.
Morningstar Farms makes an Italian
sausage crumble, too.
The short, or mezzi, rigatoni
provides a sturdy foundation for
the soft squash and spicy sausage,
but it would also be good with just
about any pasta shape.
If you have access to fresh herbs,
sub them in. Use about double the
amount of dried herbs called for in
the recipe. Prefer a chunkier sauce?
Pick up a can of diced tomatoes
rather than inely chopped.
I love a generous sprinkling of
Parmesan on top of this dish. And,
if my little potted patio herb is
cooperating, a few fresh basil leaves
as well.
ITALIAN SAUSAGE, SQUASH AND
PASTA SKILLET
20 minutes
Six servings
INGREDIENTS
Two teaspoons extra-virgin olive oil
One pound fresh hot Italian sausage,
casings removed
1/2 cup (about two ounces), chopped
yellow onion (from 1/2 onion)
3 zucchini and/or yellow squash
(one to 1 1/4 pounds, total), sliced
1/4-inch thick
Three cloves garlic, thinly sliced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme

1/2 teaspoon crushed red pepper
lakes, plus more to taste
One (28-ounce) can no-salt inely
chopped tomatoes, with their juices
1/2 cup water, if needed
One pound whole-wheat or white
mezzi rigatoni
Finely grated Parmesan cheese, for
serving (optional)
Fresh basil leaves, for serving
(optional)
STEPS
In a large skillet over medium-high
heat, heat the oil until shimmering.
Add the sausage and cook, breaking
up any large pieces with a wooden
spoon, until just browned, about
eight minutes.
Add the onion and cook, stirring,
until just softened, about three
minutes. Add the zucchini, yellow
squash, garlic, dried basil, oregano,
thyme and pepper lakes. Stir to
combine and cook until fragrant,
about two minutes.
Add the tomatoes and their
juices, increase the heat to high,
stir and bring the mixture to a boil.
Reduce the heat to low, cover, and
simmer until the squash is softened,
stirring occasionally, about eight
minutes. Add about half cup water
to the tomato can and swish it
around. If the mixture gets too dry,
add splashes of the tomato water.
Bring a large pot of water to a
rolling boil over high heat. While
the sausage mixture is simmering,
boil the pasta, about three minutes
less than the package directions
indicate. Drain, reserving the pasta
water. Add the drained pasta to the
skillet and toss it with the sausage
mixture to coat. Simmer, adding
splashes of pasta water if the
mixture is too dry, for about two
minutes, until the pasta is al dente.
Serve the pasta, topping with
grated Parmesan and basil, if

Limitations test your creativity in
the best possible way.
These are the fruits of my
labour: two recipes that work well
together or stand proudly alone.
The irst is a quick curry that uses
the clever blend of garam masala
and tamarind to give it a sweet-
sour kick. I use sweet potato, but
squash, or regular potato, would
work too. And a kachumber salad,
which is, to my mind, proof of a
recipe that’s more than the sum of
its parts. Necessity is indeed the
mother of invention.
SWEET POTATO AND TAMARIND
CURRY
This is a stripped-back curry
that tastes as if it was a lot more
complicated. While it is very good
on its own, I love it with the ive-
ingredient kachumber salad below.
Alternatively, top with a squeeze of
lime and some coriander, should
you have some.

Cook 45 min
Serves four
INGREDIENTS
Oil (I use coconut)
Two onions thinly sliced
Two tbsp garam masala
800g sweet potato, peeled and cut
into 3cm pieces
1 x 400ml tin coconut milk
Two tbsp tamarind paste
Salt
Heat a little oil in a large, deep
saucepan, add the onion and cook
for 10 minutes until soft and sweet.
Add the garam masala and cook
for another couple of minutes to
toast. Add the sweet potato,
coconutmilk,500mlwater,tamarind
and a good pinch of salt, and leave
to simmer on a low heat for 25£30
minutes, until the sweet potato is
cooked and the sauce is rich and
thick. Taste, and add more salt or
tamarind, if the curry needs more

of a sour kick. Divide between four
bowls and serve with brown rice or
chapatis, if you like.
KACHUMBER SALAD
I have been making this on repeat
all summer, and I will not stop until
the British tomatoes run out.
Prep 15 min
Cook 5 min
Serves four as a side
INGREDIENTS
½ tsp cumin seeds
500g mixed tomatoes
Zest and juice of one lime
One small bunch coriander, inely
chopped
One red onion, inely diced
Extra-virgin olive oil, to drizzle
Salt and black pepper
Start by toasting the cumin
seeds in a hot, dry frying pan, then
set aside to cool.
Roughly chop the tomatoes,
and mix in a large serving bowl
with the toasted cumin seeds, lime
zest and juice, chopped coriander
and red onion.
Drizzle with extra-virgin olive oil,
season, then give everything a good
mix and serve.

Tiger King to return
for Series 2?
BANG! NEWS - The Netlix series -
which told the story of eccentric
zookeeper Joe Exotic and his
bitter rivalry with Big Cat Rescue
animal sanctuary owner Carole
Baskin - was a huge hit when it was
released on the service in March,
and the streaming giant is said to
have secured the rights to a follow
up season.
While Joe - who is currently
serving 22 years in prison for
plotting to murder Carole - and
Dillon Passage are said to be keen
to take part in another series,
Carole is reportedly holding out
for a "seven-igure sum".
An insider told
The Sun
newspaper: "Carole is asking for a
seven-igure sum. It's around the
GDP1 million mark. She wants to
plough it into her Florida sanctuary,
Big Cat Rescue. Taking part in
Tiger
King
opened up her private life and
she wants to make sure it's worth
her while."
It comes after Carole granted
control of Joe's zoo, The GW
Exotic Animal Memorial Park in
Wynnewood, Oklahoma, in June.
A federal judge in the western
district court of Oklahoma ruled
that Joe previously fraudulently
transferred the property to his
mother Shirley Schreibvogel, to
avoid paying Carole a settlement in
a trademark infringement lawsuit.
The zoo has been run by Joe's
former business partner Jeff
Lowe since 2016 but he was given
120 days to vacate the property,
including removing all of his
animals housed there, before
Carole seizes control, according
to a copy of the ruling published
by the Courthouse News Service.

and insisted the zookeeper was

her younger sibling Kelly, who

autoimmune
disease lupus, has contracted
COVID£19 after only making trips
to the pharmacy.
She wrote: "My sister Kelly,
who already has lupus, now has
COVID£19. This is her hospital
room. One of you Non-Mask
wearers did this.
She does not have an
immune system.
The only place she went was
the pharmacy.
There is no testing in
her county unless you are
symptomatic, & then it's 5 day
wait for results.

The

ighting for his life, and that they
stayed at home as long as they
could. In Montana, where they
live, you can't get tested unless
you're symptomatic, and then
you don't get your test results
for ive days.
“Also, the people that
they came in contact with,
like my mother who's had two
heart attacks, ive stents and
a pacemaker in the last ive
months, couldn't get a test
becauseshewasn't symptomatic
even though she could've been
near asymptomatic contact that
gave them COVID.”
Beyonce had to revise Black
Is King amid pandemic

supposed to "add more to the
story" of
Black Is King
before the
coronavirus pandemic shut down
ilming. The 38-year-old singer
releasedher powerful visual album
on Disney+ last month, and two of
the directors for the production -
Kwasi Fordjour and Blitz Bazawule
- have now said they were forced
to revise the story because of the
global health crisis.
Kwasi revealed: "Deinitely. We
were planning to add more to the
story. We had to table that idea and
really look at everything we had
and go, 'Okay, this is what we've
got, here is the messaging, here
is the story. How can we enhance
this?' We had the key ingredients
and all of those things helped tell
the story the way we told it."
To help piece together
the story without shooting
any more scenes, Kwasi and
Blitz had to grab old videos
and unused footage, which
presented a unique challenge
for the creative team.
But Blitz believes the setback
happened for a reason, as it
made for the perfect timing of
the piece amid the Black Lives
Matter protests.

has distributed over 2,000
backpacks of school supplies to
disadvantaged children.
The
Spotlight
hitmaker and
her sister Julia were joined by a
group of volunteers for their 10
th
annual Hatch Day in Chicago
on Friday, which saw them help
out kids in need via their Julian
D King Gift Foundation, even
though they had to do things
differently this year because of
the coronavirus pandemic.
Jennifer explained in a video
shared to Instagram: "We're still
out there this Hatch Day, just in
a different way. We're going to
hit these streets and sneak up on
y'all. And we're going to drive by
with backpacks, because we don't
need crowds this year, but we will
want to make sure we service the
children.”
Hatch Day takes place on
what would have been Jennifer's
nephew Julian's birthday but he
was tragically murdered, along
with the 38-year-old star's mother
and brother.
And the '
Dreamgirls
' actress
and her sister - who was Julian's
mother - made sure they took the
time to honour him.

celebration of what would have
been her relative's 19
th
birthday,
Jennifer - who has 11-year-old
David with former partner David

but we made it thru it all! Although
it was very different this year with
all that's going on ! We went to
@juleyah house and celebrated
#Julian d.king bday, he woulda
been 19 ! My munch made his
cousin cake , which made it even
more special!”
